Pure Premium Arabica, Indonesia, semi-washed. The raw bean of Batak Lintong has a heavy, green color with a slight bluish tint and is very carefully sorted by size. This is perhaps the main reason why this coffee tastes gentler and milder than its “big brother”, the Mandheling.
On the other hand, Batak Lintong’s very peculiar way of processing might be responsible for this fine, exotic taste. The farmers don’t remove the pulp remains by fermentation in the water, but by manual rubbing in the sand. After drying several days in the open air, the parchment skin peels off.
This incomparable gourmet coffee only really comes into its own if an expert roasts the beans slowly and gently. After at least 18-22 minutes in a drum roasting machine these beans reach a perfect medium-dark, homogeneous color.
