This coffee is pulped on the La Cabaña mill and then dried directly without a washing process. El Abuelo Moisés Meza already started around 1960 with this so-called “Honey Process” at Finca el Rosario. During this preparation process, the coffee retains the sweet, honey-like slime that gives it a slightly fruity taste.
